MASSAGED KALE SALAD


This is an awesome-sauce kale salad recipe! The trick to a kale salad is massaging it with your hands...I know, weird right? But it's true it makes the kale absorb the flavours - especially the nutritional yeast and apple cider vinegar. It becomes much more palatable. It's super easy and something that Simon and I put together over and over again when we are lazy and can't think of anything else to make for lunch or a dinner side. 

A quick side note: I can't believe it's January already! When I was little, 2014 always seemed to be "the future" where everyone would be wearing very sleek silver clothing with micro-chips inserted into their brains, where people would live in space and eat prepackaged goop for dinner. I'm very thankful that we have entered 2014 with some people eating real food but when I got to thinking about the current state of our grocery stores...we aren't that far off from being the prepackaged goop eaters of the future. I am beginning to see a shift however to people wanting to go back to producing and making their own food. It's not for everyone of course...but wouldn't it be nice if a larger fraction of the population could devote their lives to supplying quality produce once again? 

2014 brought Simon and I an unexpected surprise. We arrived home on Dec 31 to a notice on our door saying that major renovations would be done in our building and we would have to move by the end of Feb. Needless to say I was not exactly a happy camper at that point. But as fate would have it we have found a very beautiful apartment to move into with a great big roof patio where we can start a little garden this summer (woohoo!). So my goal this year is to make as much of this salad recipe from my own veggies as possible by the end of the summer! 

Massaged Kale Salad

INGREDIENTS:
✿ 5 cups finely chopped kale
✿ 2 cups grated carrot

✿ 4 sundried tomatoes (chopped finely)
✿ 1 medium tomato (chopped)
✿ 1 cup alfalfa sprouts
✿ 2 tbsp green onion (chopped)
✿ 2 tbsp flax or hemp seed oil
✿ 1 tsp wheat free tamari
✿ 1/2 tsp sea salt
✿ 2 tsp apple cider vinegar
✿ 1-2 tbsp nutritional yeast
✿ 3 tbsp ground hulled sesame seeds

INSTRUCTIONS:
1) Prepare all of the ingredients as directed.
2) Place the kale in a large bowl with the flax or hemp seed oil.
3) Massage the kale for about 1 minute with your hands until it becomes softer.
4) Add the grated carrot, sundried tomatoes, green onion, tamari, applie cider vinegar, sea salt, nutritional yeast and sesame seeds to the kale. Massage the ingredients in with your hands.
5) Add the tomatoe and alfalfa sprouts and gently mix them into the salad.
6) Serve.
