COCONUT FLOUR BANANA BREAD

When we moved to BC it was partly to get away from the crazy east coast winters. We have been joking lately that the weather has totally changed here just for us because we have had an incredibly dry summer and now what looks to be an even drier beginning to winter. There is no rain in sight...just cold! As much as I don't particularly enjoy the cold and am enjoying the sun through the windows as I plunge myself into full hibernation mode...which means lots of warm blankets and even more baking. It's also that time of year again where I'm writing exams (will I ever be done school??) and if you have been reading my blog at all I tend to post mostly when I am procrastinating and so I though why not continue the pattern! I have created a delightful grain free banana bread. It's not too sweet but its just spongy enough and if you use butter in the recipe will satisfy you with the moistness of traditional banana bread. Best part is, it's grain free and sugar free if you want it to be!  

Coconut Flour Banana Bread

INGREDIENTS:
✿ 2-3 medium sized ripe bananas (about 3/4 cup mashed)
✿ 4 eggs

✿ 1/2 tsp vanilla extract
✿ 1/4 tsp liquid stevia (or 1/4 cup honey)
✿ 1/2 cup coconut oil or happy butter
✿ 1/2 cup raw cashews
✿ 1/2 cup coconut flour
✿ 1 tbsp arrowroot powder
✿ 1 tsp baking soda
✿ 1/2 tsp cinnamon
✿ pinch of nutmeg
✿ pinch of sea salt

INSTRUCTIONS:
1) Preheat the oven to 350. Grease a bread pan and line the bottom with parchment paper. 
2) Place the banana, eggs, vanilla, coconut oil, stevia/honey and cashews in a food processor and process until a smooth batter forms. 
3) In a medium sized bowl combine the coconut flour, baking soda, cinnamon, nutmeg and sea salt. 
4) Pour the wet mixture into the dry mixture and combine. 
5) Pour the batter into the bread pan and smooth off the top with a rubber spatula or damp fingers.
7) Place the bread in the oven for 45-50 minutes or until a toothpick comes out clean when inserted in the center.
8) Remove the bread from the oven and allow it to fully cool. 
9) Slice, top with a bit of coconut oil or butter and enjoy!
